Code 21
There were many items not date-marked in the walk-in. 3-501.17 Ready-To-Eat Potentially Hazardous Food (Time/Temperature Control for Safety Food), Date Marking - PF All potentially hazardous ready-to-eat foods shall have a date. The person in charge stated they were made on the 4th and if they aren't used today will be discarded.
Code 54
The lighting in the walk-in is low (3 foot candles). 6-303.11 Intensity-Lighting - C Lighting shall be at least 10 foot candles in all refrigeration units. You will have until the next inspection to increase lighting before you lose more points. Repeat.
Code 47
There is mold growing along the edge of the 3-comp sink. The trash is overflowing in the bathroom. 4-601.11 (B) and (C) Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils - C Nonfood contact surfaces shall be free of food debris, build-up and other soilage.

The low boy has a ripped gasket. 4-501.11 Good Repair and Proper Adjustment-Equipment - C All equipment shall be in good repair and proper adjustment. Please replace. They are using one porous bowl for a condiment serving dish. 4-205.10 Food Equipment, Certification and Classification - C Equipment used must be approved. This is not an approved contact surface and is not easily cleanable. Do not use.

There were raw eggs stored behind juices and ready-to-eat items. 3-302.11 Packaged and Unpackaged Food-Separation, Packaging, and Segregation - P Raw animal foods shall not be stored so that they may contaminate ready-to-eat foods. Eggs were moved to the bottom shelf. CDI

Many bins were wet-stacked. 4-901.11 Equipment and Utensils, Air-Drying Required - C All equipment shall be air-dried after it has been washed, rinsed and sanitized. Please cross-stack bins to allow them to dry.
